LPT: drop this in a .bat batch file on a secondary drive to easily make backups of your interface. Change wow folder if needed. When ran it creates a folder named the current date (YYMMDD) and copies anything related to interface mods.

To automate the process, create a simple task in Task Scheduler on a weekly recurring timer pointed to the batch file. Start > search 'Task Scheduler' > Action > Create Basic Task

SET GAMEDIR=C:\Program Files (x86)\World of Warcraft
    SET NDATE=%date:~-4,4%%date:~-10,2%%date:~7,2%
    mkdir %NDATE%
    xcopy /E /C /Y "%GAMEDIR%\Fonts" "%CD%\%NDATE%\Fonts\"
    xcopy /E /C /Y "%GAMEDIR%\Sound" "%CD%\%NDATE%\Sound\"
    xcopy /E /C /Y "%GAMEDIR%\interface" "%CD%\%NDATE%\interface\"
    xcopy /E /C /Y "%GAMEDIR%\WTF" "%CD%\%NDATE%\WTF\"
